Can I refuse to talk to my landlord in person, and only contact him through written form?
My landlord tends to be somewhat aggressive, demeaning and flippant when he talks to me to the point I am too anxious to talk with him. He also makes threats regarding upping my rent illegally.
Problem is there is no evidence of this.
Am i within my rights to not answer his calls and only talk to him in writing. ie text/email. That way I he has to threat me with respect, and if he doesn't I will have hard evidence of his actions

How odd. You seem to think your landlord can't raise the rent. They can when you sign a new lease. They can tell you they're going to raise the rent as well. They cannot raise your rent in retaliation because, say a tenant is an idiot - though they can find reasons to evict you...
Also odd that you seem to think everyone MUST treat you with respect. There is no law that states people must treat you like a fragile being.
Here's your problem. Landlord will claim you refuse to speak to him about whatever. He will also claim that he has never gotten texts/emails from you - and you can't prove that either. That will put you in a bad situation.
Why not just be an adult and listen to the guy, and respond politely like an adult? Look ahead to the future and move when your lease is up?

There is no such thing as a "right" to tell someone to not talk to you about business matters.
