How to sell grilled chicken as a street vendor?
I'm thinking about opening up a booth at the farmers market where I'm grilling chicken and serving it with my BBQ sauce. I've grilled chicken a million at home. However I know that street vendor grilling is different than doing it at home. My home method would take too long and grilling too many ahead of time will cause it to go cold, burn, dry etc. So what is a method to grill it on the grill but have it within less than 5 minutes? I plan on serving all parts of the chicken bone in.

A farmer's market is there for hours all day or morning so there would be plenty of time and you could have some already cooked and you could keep them war with some kind of setup if there is no electricity for a warming pan or grill you could use a can of Sterno or have a small camping stove. You could have a few warming while you are cooking others.

Bone-in? That's not very convenient for me to eat when I've got a stroller and overflowing bags. Skewers, like Satay are much easier to eat, especially for children.
Cooking in advance? Meh. The thickness of a chicken thigh takes far too long and again, skewers are an advantage as they can cook quickly.
Have good sauces, NOT BBQ HONEYMUSTARD, and you'll be a legend.
Check with the Farmer's market about the certifications you will need

bake it at home to the proper temp and just grill it when you sell one so you have the nice grill marks.
maybe take a culinary class. if you **** up chicken, you could kill people

check with your local farmer's market about it and also about licenses you must have, too.

Cook it partially at home and finish it on the grill in your booth. It will require some practice to find the best method.

what kind of "street vendor" are you referring to ?? some people will just sell food out of whatever and there's no idea if it's safe to eat or not.............you will need licenses, insurance, and so on
