Well either way you're leaving so you might as well come right out with it and tell her the truth. You've been offered a better opportunity for better pay elsewhere.

take it! and in future, NEVER tell your boss you've been offered another job. just say you're leaving. the fact that you told her is why she's not taking you seriously.
