a classic is beans and rice and its fast if you use canned beans and minute rice.
Saute peppers, onions,celery and garlic..add the canned beans and the prepared rice and 1 can of diced tomatoes. Season as you desire. Cover and simmer for 10-15 minutes or until the flavors blend.
