Shimano's hierarchy can be found on their website, SRAM's as well. "Better" is a relative term which depends on how much you can afford to spend on your bike. As well, you have to look at the whole bike. Better components on an inferior, ill fitting frame will not necessarily yield a better bike. My own mountain bike is a good case in point: The original frame was poorly designed and manufactured. The main triangle broke twice and I have also broken part of the rear triangle once. The components are high quality, but if the original frame had been properly designed and manufactured, even with poorer quality components it would have been a better bike

Look 'em up on the Shimano website. https://bike.shimano.com/en-US/home.html They're all listed. SRAM also makes some nice stuff. It's basically personal preference.
