The French value fresh food and have laws behind food quality. Some of the best chefs actually import their ingredients from France. So 2-3, sure, but also good high quality food. Fresher and higher quality food is more nutritious. For example the more flavorful heirloom varieties of produce grown on good soil also tend to be higher in nutrients. And older produce has much less, even after 1 week.
In general nations that eat fresh veggies and seafood tend to be thinner too, after you remove the starving nations.
Wine is low in resveratrol and that has nothing to do with anything btw. The studies were actually done with reservatrol extracted from an obscure plant that actually has a significant amount, unlike wine. That was a made up BS explanation to make a story that was popular for a bit. And while nice, so are 1,000 other things, and it's not something the French consume much of.

Stupid Americans still cannot understand that saturated fat is not bad for you.
A doctor spent 5 years living with the Inuit, during that time he saw zero cancer, cardiac problems or dental caries.

It is not paradox :). In Paris at the center near the Eifel there is restaurant with the first "train" as exponent, where you are able to order tartar-beef (fresh meat finely minced) with black pepper and fresh egg over in mid. Tartar beef recipe is from ppl 4000 km away from there but you able to have it in center of France.
The secret behind phenomenon is "eat what you wish". ^

Who the hell said eating aspartame cookies and diet soda made you healthy? If you eat nothing you are made of nothing. It's not a paradox at all to show people who eat rich, fatty, dense foods are made of rich, dense, fatty things without being big fat slobs like Americans. Skin, hair, brains, organs, and everything else are made of proteins and lipids. Somehow Americans think living off diet chips makes them "healthy." Think of this, cats are made of air, water, and cat food. What are you made of?

People act like French people have some magical hold on weight loss. You realize this advice is completely universal right? Essentially all they're saying is eat fresh foods in moderate portions and exercise. The fact that French people drink wine (and not all French people drink wine by the way) has nothing to do with weight loss.

There is no paradox. Science just got it wrong.
