Because Britain is a commonwealth and she was born in England and it’s different from Scotland, Northern Ireland, and Wales even if they are a United Kingdom.

It defines her from Being Scottish, Irish etc . Britain includes all of those areas, whereas England doesn't.

British could mean that she was born in Scotland, Wales, Northern Ireland or England. Kate was born in Reading, Berkshire in England so she is English. Not many Scots, Welsh people or Irish people would appreciate being called British, preferring Scottish, Welsh and Irish respectively.

Because she is English, not all British are English, but all English are British
