Time frame of disclosing rent information from Landlord to tenant?
I currently have the lovely CRA looking into my previous year tax assesment, mainly rent paid.
I am contacting previous landlord for a copy of all rent paid, dated and letter head.
How long do they have to respond? As I have tried contacting this landlord previously for other things and was being ducked every time

I don't believe there would be any requirement for a previous landlord to provide you with anything pertaining to this...period. You should be able to supply your bank statements and/or copies of cancelled checks, perhaps receipts if paid in person...etc.
I would be shocked if a prior landlord would actually be compelled to do this for you...
Personally, I would throw your request in the garbage. There is zero benefit to the landlord to do this for you...period.

Your landlord does not have to waste his time to respond to you. It is your responsibility to keep your receipts and/or cancelled checks.

No landlord is required to respond to you after the event, you can already prove what rent you paid as you have a receipt for payment/rent book/bank statement

Your landlord is not required to respond. It's your responsibility to do your own bookkeeping. If you need a receipt, you ask for it when you make the payment, not a year later. Your landlord is not your personal secretary.

I don't believe there are any restrictions or regulations regarding this. I'm not sure your former landlord HAS to respond at all.
