    I'd have to say the turkey. We love to cook and we have really refined our favorite sides over the years, but I took over cooking the turkey when my grandma died when I was 13 because my mother had to work.

    My grandmother cooked a lot of things really good; but sadly, turkey wasn't one of them. her seasonings were lovely, and her stuffing & gravy delicious, but her turkey meat was always super dry. It was never the highlight of her dinner (her lasagna was, lol-- she was Italian).

    I always helped her cook on holidays, so I did the turkey the same way she did for a few years... but realized that people were just not that into the turkey meat. It was like an obligation to have it, because it was Thanksgiving, and everyone insisted turkey be on the table, but it wasn't the highlight of the meal by any means. Most people took a small piece or two, smothered it in gravy and choked it down. Leftovers almost always went to waste, or to pets.

    Then I got into cooking shows & magazines, etc... I became a little obsessed with perfecting my turkey cooking at that point. For over 30 years I'd even practice-- making a turkey every few months, 2/3 per year on average, trying different ingredients and techniques and cooking methods. Researching, experimenting. It was like a hobby, idk, lol.

    Anyway, my turkeys have gotten really, really good over the years. Now it seems no matter how big of a bird I get, no matter how much I make, it goes soooo fast.

    Leftovers don't last long, even if we had plenty at the end of T-day dinner. My kids literally fight over them, lol. Even my mother, the pickiest eater I've ever known, who used to say she *hated* turkey, loves my turkey... and asks for leftovers. A triumph.

    Any other side dish if I wanted to swap it out to try something new, they'd be okay with it, but if I suggested something other than turkey they have threatened to revolt. So I guess that has to be our best dish.

    The pies. All homemade from the bottom up. Fresh, sweet pumpkin, fresh, tart apples. The perfect dessert.
