If I can find a cell phone (Samsung smartphone) I threw into the woods 5 years ago, could I still get information off of it?

    If it still worked yes. Or you could send it to Samsung's lab. They might there be able to clean it. Remove data. For a high price.

    likely not. It will be so corroded it won't turn on

    Yes you could as long as its not corroded - the insides are very sensitive to moisture
