How do I cook oysters....?
I am making a seafood soup with chili and garlic, I usually add prawns, scallops and mussels.
This time I would like to substitute oysters for the mussels.
Would you say the cooking time for oysters is the same as for any other seafood?
What happens if oysters are overcooked?

The cooking time for the oysters should be very similar to the cooking time for the mussels. Overcooked oysters can be either rubbery and/or dried out. The nice thing with oysters is that a little under-cooked is ok. I realize some people do eat raw mussels, but for most of us - we like them better cooked. So maybe a minute less than you would do mussels assuming the oysters are approximately the same size and format (with or without shell) as the mussels you are used to cooking. If they are in shell it's pretty much waiting for them to open, too.

You really want them just set. Overcooked oysters get dry and overly firm. Either gently poach them in clam juice and add them when serving, or add them to the boiling soup and take the kettle off the heat.
