You could do voluntary work which would improve your prospects. After I was made redundant, it took me 9 months before I got my next job. Don't give up.

"..but nothing good has come up" - for now you need to lower your expectation and take a minimum wage job if that's all you can find

Since you're getting interviews, that is what you need to work on. You're obviously doing something wrong when during them. So, practice. Do online searches for interviewing tips, practice interview questions, etc. See if you can get someone to do practice interviews with you. Interviewing is a skill. And like all skills, it can be improved with preparation and practice.
Also, apply for jobs you know you don't want, just for the practice. See if you can convince them to offer you the job. It's an amazing confidence boost to know that you don't need or want somebody.

If you need the money then, you can't be too picky about employment. If you get a job offer, take it. If some thing better comes along then take the offer and quit the other job.
