In the US... Why is it that whenever slavery is brought up, nobody talks about the Chinese?

Because the Chinese in America weren't slave - they weren't "owned" by anyone. They were free to live where they wished. They could get educations. They worked for slave wages but that doesn't make them slaves. Heck, plenty of white people work for slave wages as well.
I think you are confusing slavery with human rights. Two different but similar things.

In the US, whenever Slavery is brought up, it is framed as if it only existed in the US.

Slavery is terrible. Many people refuse to acknowledge that all races are guilty of enslaving other people at one time or another. It's easier to blame the white man then it is to accept the truth.

Human rights and slavery are two very different subjects, similar but not the same.
