    I'm a picky eater too.

I try to eat as much as I can of the healthy food items that I like.

I like to roast up some potatoes, pumpkin and carrot as a meal.

Sometimes I will make mashed potato and dip it in steamed peas and corn.

It's also important to remember to try things that you haven't tried before, as well as trying things again every few years because our taste buds change.

Up until a few years ago, I wouldn't even eat pizza, but now I just order exactly what I want on it and I love them.

Therapy. It's psychological and you really should have grown out of this before you hit 18. Your parents failed you. Learning to cook helps. I was a picky eater as a kid. I was indifferent until I learned to cook my own meals. Now I love everything.

Make an appointment with a behavioral psychologist, you have mental issues that can be modified helping you to accept a better variety of foods.  I have saw a  documentary on the subject.
