Have you been checked by customs at re-entry? (USA) ?

I’ve traveled abroad several times and never had anything do declare when I returned. I’ve also never been searched (that I’m aware of).

Let’s say someone goes to London from NYC. While in London, they spend 12,000 USD on a Rolex Submariner. When they return to NYC, they don’t intend to declare any goods. I’ve heard tons of stories of people getting caught so my question is, how do they catch you?

If you stick it in anyone's face, then you will get questioned.  People with fake Rolex often do that.  Real Rolex owners seldom show anyone.  Also if you are wear it then it will attract less attention, than it will in the box. Just do not tell anyone it is new.

I have owned a Submariner  since 1996. I have left and returned  to the USA about 30 times. I have never been questioned.

They check what you are wearing. Nobody travels with a Rolex, at least nobody in their right mind. If you are wearing one or one is in your suitcase at re-entry into the U.S., or Canada, expect to have to pay a customs fee on it. You might get lucky but chances are that you won't and will have to pay up or have it confiscated.

Well first of all announcing to everyone within earshot that you plan to smuggle in a $12000 dollar watch is one way to get caught
