What does normal cooking taste like to chefs?

Are pro chefs really that picky about cooking or is it just for the TV. Would they pay attention to detail when they eat at a friend's house. Dose the slightly over cooked lamb taste good to them like it does to a normal person or do they just put on a fake smile to be polite?

    As a chef, I do not critique another persons dish If I am having it at their home. Keep in mind that Professional chefs Also like mac and cheese on occasion-or just Comfort Food. We do not Always make some of the stuff you see on TV. That is for Theatre, not the real world. 

    We also eat hamburgers on occasion-not hand ground Wagyu beef with Artisan cheese on a homemade brioche bun too.

    They’re usually picky when it comes to dining with friends if they’re serving highly processed or convenience foods as they’re horrible. The hiccups by amateurs are overlooked, like degree of doneness etc., as they usually welcome others cooking for them.

  • They are picky, but they like many of the same things you do. The late Anthony Bourdain was a huge fanboy of In-n-out burgers and Waffle House. Tom Colicchio loves fried chicken and barbecue. Talk to famous chefs, they like simple things. A bowl of pasta. A roasted chicken. A good burger. An omelet.

    most all chefs ARE normal cooks.

    We just are willing to experiment more, add new things to the seasoning roster, etc, try new dishes from outside our comfort Zone.

    AND keep in mind because a chef cooks something doesn't mean they also like it.

    I know plenty of chefs who cook fantastic dishes involving fish and wouldn't touch it with a fork because they don't like fish or are allergic.

    A chef is a real fuss budget, so normal cooking is blah, boring.

    All the chefs I know eat lots of fast food because they're too exhausted from work to cook at home, and they work early mornings or late nights.

    Pro chefs often throw together very simple meals for themselves. Puttanesca spaghetti basically means you include anything leftover which is sitting in the refrigerator. Puta means prostitute.

    I guess you mean:

    are pro chefs foodies, who are almost obsessive about the quality of food being extremely high.

    Some probably are

    and of course some probably are not.

    For example: the typical pro chef is probably not going to turn his nose up at "plain food" like an apple or a carrot stick.

    For most

    it probably does NOT always have to be four-star food to be enjoyable.

    Actually well trained and experienced chefs could be considered the end-user themselves of the food science world. That being a degree of the same name where chemistry and biology and physics are a large part. You'll find the average food scientist degree in the R&D dept of major corporations such as Nestle.

    A decent, average fully trained chef will know a roux is a 1:1 ratio and chicken has to be cooked to 165 degrees etc. I'm sure many will know that you in your home added way too much salt and over-seared the chicken or whatever but any decent person isn't going to go Ramsey on you about it, calling you a pillock.

    The most polite way I as NOT a certified Escoffier brigade chef (what you think of as "chef") or anything like that is to go for the things on offer that aren't massively ****** up. I keep cracking on here about my roommate's bad cooking by smell. But I'll never eat it knowing his hygiene habits. If he were to offer, I'd stick to the prepackaged rolls, and somehow still pull a 3ft hair out of my mouth!
