How project managers account for time loss due to pandemic, so that when sued for delay, it is fair ?

    By keeping an accurate project log/diary/whatever that can be used to track actual delays, that can be put into an actual schedule, which can then be compared to a baseline schedule so that the actual impacts of the pandemic can be tracked, quantified and defended.
