the size of the packaging: it is sold as a luxury. in canada, the government probably treats it as a service rather than food, which quadruples the price or more. even worse is the fact that it's healthy - which is something the nazi dictatorship is not happy about. in america, however, you might be able to find bulk bags available for a reasonable price..

Because it takes time to make and depending on the desired amount of moisture in the finished product, it loses between 1/3 and 1/2 its weight in water.

It's dried and shrunken up.

Because it's expensive to make (doesn't have a lot of fillers, unlike cheaper meats),
which is why I only buy it when on clearance.
