    Flip-flopping nerves is another way of saying the person was very nervous. It also has the same meaning as butterflies in your stomach.

    basically jumpy, erratic in behavior.  She was not at all calm. her nerves were flip-flopping, she was really jittery, nervous.  flip-flopping means turning over, again and again, without any real pattern.  very erratic.
