first of all, no one can tell you your not allowed to say Merry Christmas instead of happy holidays. Obviously, if possible, you can try to ascertain first if the person you are talking to is Christian or not, or saying it to them has no point. I personally only say it to people that I know are Christian or suspect are, so I can avoid the "I don't celebrate Christmas" speech.
