Immigration partnership visa?
So me an my partner are applying for a visa to my country I am a citizen in where currently on holiday an they have ask for proof of living together we been on holiday for 2months sharing bills etc isn't that enough proof

If you're the person from New Zealand you need to talk to a solicitor. Generally speaking taking a vacation together doesn't count as cohabitation.

You forgot to tell us the country you are asking about but those countries that allow partnership visas require you to be in a de facto marriage. That generally means living together with shared finances for a couple of years. Two months on holiday is not a de facto marriage. Of course you could always make an honest woman of her and actually get married.
