In New York State, how can a person order TV channels?  (Please see details). Please no rude or sarcastic answers, thanks.?

I am out of the loop. I used to have cable. A year ago and before. Yet, instead of getting cable again, I have heard of companies that, for a monthly fee, can provide you with only the channels you prefer. I prefer channels that play college and pro basketball, such as NBATV, TNT, ESPN, NBC, ABC, MSG, and The Yes Network.  I also prefer channels that offer national news such as CNN and FOX News (please do not answer with arguments on which is better, thank you). 

I also like local (NYS) news channels, and channels that have judge shows and police shows.  I also enjoy channels like EWTN, National Geographic, the Weather Channel, the History Channel, and Discovery.  

So, in general, I may want to order about 15 channels.  Readers, please forgive me, I am clearly out of date/out of touch.  Yet, I heard that people can save money by hiring a company to offer them a package of only the channels they want, and that it's (at least slightly) less of a cost than ordering every cable channel.

This sounds awesome.  Yet, I don't remember the names of the companies that offer this.  Do you know of such companies?  Who are they?  Do you order by phone or on their websites?
