What would happen if a star player decided to never give interviews ?

Show up play the game and go home...
Players and franchises need to say enough... no interviews will ever be conducted.
If I was a coach I’d flat out tell the NFL no player interviews will be allowed during the season and no reporters will be allowed in the locker room or at practice.

It's a part of the player contract to be available to the media. The league allows media in the locker room. Part of the deal the media gets for covering the sport.
Coach wouldn't get too far with that attitude.

No you would not say that if you were the coach because the league mandates press access. You would be out of a job quickly

It would only upset the media .The fans couldn't care less. Players can't say what they think anyways out of fear.

Athletes have done that. You just don't hear much about it because they aren't talking.
