I don't know what your interests are, but I've long been a fan of the late Irish author Honor Tracey - her novels (set in the Republic, in the 1960s-1970s)  leave me weeping with laughter. She has a particularly lively ear for dialogue.

Maeve Binchy's novels, though romantic, are quite meaty, while Marilyn Keyes's earlier novels, though quite light, are extremely funny. Not so much her later ones.

And while I've never got to grips with "Ulysses", Joyce's "The Dubliners" is a classic for all the right reasons.
