is my diet unhealthy?

So about a year ago this month i got sick and lost about 20lbs in less than a month without trying, this continued throughout May of 2020 and lost a total of 30lbs. i got blood work done and came out fine and was told it was due to stress and vitamin B and D deficiency. 

12 months later i never regained the weight which im not complaining before losing the weight last year i was at my heaviest at around 220lbs im 6'1 if that matters. I wasnt huge but i wasnt skinny looking either. Right now im at 192 and it will go between 189 to 195 depending on my stress and workload from school. 

Anyways, all this also caused my eating habits to change, i went from eating 3 meals a day to just barely once because i had no appetite. These days im eating twice. ill have coffee iced or regular in the morning, at lunch ill either cook something or i'll buy something to eat lunch is when i usually consume the most food. For dinner ill have a protein shake and if i get the munchies at night ill have something light like chips with salsa. 

when i do cook for lunch which i do most of the days (i eat out once a week., and i try to make it healthy like ordering Chicken Pho) 

I mainly eat chicken most of the time, ill eat fish or shrimp once a week and red meat once a week. I don't eat pork at all. I try to add greens like broccoli or a salad with my meals. 

today i had iced coffee in the am and kfc for lunch and it was a lot of calories but i havent gone over 2,000 for today.

    You should consider more than calories.

    How much salt do you consume?  With pho and KFC = massive amounts.

    i would talk to your doctor about it
