I'm using the Williams-Sonoma Kitchen Library "Breads" book. It's the third recipe I've tried, and everytime the bread turns out very dense. I'm following all directions--mix ingredients, let dough rise, knead briefly a second time and let rise again. It's the second round of rising time that is a dud. My yeast isn't expired, but it is older...could that be the problem?

I have one gallon of crab-apple juice that is very thick and syrupy. I need two gallons of juice according to the recipe. Can I just add water? Or should I add regular apple juice made from concentrate (no preservatives.) What would you do?

For twenty years, I've had this test done once a year. Now, the clinic insists I do this twice a year, but I cannot afford it! Is this a change in standard treatment now? I may have to drive to my old clinic an hour away which would be cheaper than paying twice for labwork. Anyone know what the standard is? Did it change recently or is this just some hospital administrator's way of earning twice the money?
