I was raised in Orleans' France..until I was 12... I haven't been back since I was 16.:(and I still miss it. I am the mother of 10 children...8 by birth 2 by marriage. I am a cook/chef and have worked every type of restaurant...from a greasy spoon diner to a 5 star restaurant....I am currently working in the former seeings I live in the middle of nowhere Tennessee...and fine dining consist of fried chicken livers,and beans....lol I also own a concessions trailer and do fairs and festivals and this eventually will become my primary focus....If anyone is toying with the idea of getting into concessions...I highly recommend the business...very low over head...and remarkable profit...in 4 weeks I can easily exceed my yearly income. I love the ocean...boondock camping .....reading classics...watching classics ...Jane Austen,Charles Dickens... I like the blues...blue grass,classical,old r&b.... I love Freddy Mercury &Queen and dead can dance....

  • I have a question regarding Epilepsy.?

    A friend of mine has been Epileptic most all her life(48 yrs) and has been on many different medications.

    3 months ago she was found to have hep 3 ,further test showed sever liver damage..stage 4 cirrhosis..caused by the medication taken for her Epilepsy

    My question is this.How often does your Dr. take toxic levels?she had therapeutic levels taken frequently. It just strikes me odd that it had gotten so advanced before being caught.Her only hope at this point is a transplant,

  • has anyone tried this?

    today i ran out of Auto dish soap...so in a pinch I used a T of laundry soap...and 1 T bleach...and my dishes came out cleaner than they ever have....I am seriously thinking about simply using it from now on...A bottle of cheap laundry soap is less than what I pay for auto dish soap...and would go so much farther...before I get comments regarding the ingredients being harmful...That isn't the case.My dishwasher rinses very well,and there was NO residue at all...to the contrary... they sparkled.

    I dont watch a great deal of tv...but there are a few shows I would like to watch but,I work a great deal...Are there any sites where I can watch full episodes of shows I have missed...I would prefer them to be free sites I dont watch enough tv to make it worth while to subscribe....which is why I have opted not to have cable

  • I want your suggestions!?

    I own a concessions business...and I am always looking for Ideas that set my food apart...

    My 4 main Items are Philly cheese steak,Grilled Kielbasa,A Monster Chili Cheese dog.. Chicken Fajitas.

    My Kielbasa is served on a nice hoagie roll...and topped grilled Green peppers and onions....I have a sauce that is made of sour cream,Dijon& horseradish that I spread on the the roll and it gives it just a little something different...

    My question is this...My Philly cheese are pretty traditional...but I have been toying with the idea of adding this spread to my Philly's as well....Is this a yea or nay?

    Also...I would love ideas on how to set my Monster dogs apart...They are 1/4 pound ..I serve them on a hoagie roll with chili and cheese....

    My father is American and I have had little problem locating his ancestors...My mother is French(Babault,Mardelet) and I cant seem to find anything .

  • How are you adjusting to the higher food cost?

    Interested in hear about what others are doing to adjust their food budget.Seeing that the price of everything is going up,yet our wages are staying the same.

    I personally refuse to pay $4.00+ a pound for bacon....and the guy down the road sells fresh egg for a lot cheaper than what I can get them for at the market.

    We have been toying with the idea of opening a restaurant for the last year,but,we are not real comfortable with investing the amount of money it would take....

    We attend a lot of blues and jazz festivals and we noted the concession stands..so we have opted to buy one.and keep our jobs but,do it as a side line...I would love to hear from those who have been involved in this type of business...and any advice and suggestions you have to offer would be more than welcomed.

  • Hunting for food?

    I live in the southern part of the states where guns and hunting are a way of life for many here....not for survival .but, for sport and they enjoy Venison,wild turkey and there are many organizations that give meat to the poor.

    I have lived in the Northwest and it was completely different....Very anti hunting and guns.

    I was just wondering what the general consensus was regarding hunting in your area of the States and other countries.

    I put this in the food area because I think it relates to additudes about food and the only other option was the hunting section...and I rather doubt Id get varied opinions there..

  • Why can't I find pork liver in stores?

    I like making pate'.but ,it is best made with pork liver....,Ive made it with both beef and chicken livers....which are milder.but, they both have a "bite" at the end that throws off the taste...

    Does anyone know why pork livers are not sold commercially in the states?or is it simply not available in the state I live in (TN).
