Personally, I would start with One Size Fits All or Roxy and Elsewhere for some of his rock oriented stuff, or Hot Rats, Grand Wazoo and Imaginary Diseases for his more jazz and jam band music. Any of those albums would be a good place to start, and none of it's too far out there for someone just getting into his music. You could also try the Läther album, which is 3 discs, and covers a really wide variety.

Oooh man, I JUST got into Frank Zappa a few months ago...
Burnt Weeny Sandwich - This CD is pretty technical
Cheap Thrills - Goofy yet very entertaining
Does Humor Belong in Music? - The title says it all
Sheik Yerbouti - A classic of Zappa's
Live in New york - Supposedly Zappa's pure essence on a CD.
Or you could always start with his very first debut album, Freak out! and work your way up.

Tom: You're naming Mothers of Invention albums. And to answer your question: I think Joe's Garage Is his best work, but I would start with either HOT RATS, or Apostrophe (').
