How do you make salad dressing? Any type from scratch?

I'm making a chicken salad with flour tortilla strips and seasoned chicken and lettuce and carrots and such. and croutons. I just need some salad dressing but don't have any. How could I make some?

Smoke up, I use a basic red wine vinegar, olive oil, and 1/2 a teaspoon of dijon mustard and whisk together, don't forget a touch of S & P.

Here's my Thousand Island Dressing recipe that I've used for years.

THOUSAND ISLAND DRESSING

1. Pour 1 inch of pickle juice into a glass (sweet or sour - your choice)
2. Add a squirt of catsup
3. Add a squirt of mustard
4. Add black pepper to taste
5. Add a large tablespoonful of mayonnaise
6. Mix well. It's OK to see small white flecks of mayonnaise. The more mayonnaise you use, the thicker it is so if you want it to pour thin, use less mayonnaise.

For your chicken salad, you could add a little salsa to it as well to add a kick or even add a little chili powder. My dressing is absolutely wonderful on a nice Crab or Shrimp Louie.

For home made ranch:

1 cup mayonnaise
1/2 cup sour cream
1/2 teaspoon dried chives
1/2 teaspoon dried parsley
1/2 teaspoon dried dill weed
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/8 teaspoon salt
1/8 teaspoon ground black pepper

Here is a recipe I often take to gatherings. The dressing recipe is awesome. Give it a try. Everyone asks for the recipe.....Enjoy!!!

MANDARIN ORANGE SALAD

1/4 cup almonds, sliced
1 T. plus 1 tsp. Sugar
½ head iceberg lettuce
½ head romaine lettuce
1 cup celery, chopped
3 green onions, thinly sliced
1 (11 oz.) can mandarin oranges, drained

Dressing:
¼ cup vegetable oil
2 T. vinegar
2 T. sugar
1 T. parsley, snipped
½ tsp. Salt
Dash pepper
Dash hot pepper sauce (Tabasco)

*Tear lettuce into bite size pieces. Place greens in large plastic bag, add celery and green onions. Fasten bag and refrigerate.
*Combine well in a jar: oil, vinegar, sugar, parsley, salt, pepper and Tabasco. Refrigerate at least one hour.
*Cook and stir almonds and sugar over low heat until sugar is melted and nuts are coated. Cool on wax paper and break apart.
*Pour dressing into greens bag 5 minutes before serving. Add oranges. *Shake bag. Add almonds and serve.
*Serves 4-6

4 drops Tabasco Sauce
Shake everything up or blend in a blender
adjust seasoning to your liking.
