How do you make salad dressing? Any type from scratch?
I'm making a chicken salad with flour tortilla strips and seasoned chicken and lettuce and carrots and such. and croutons. I just need some salad dressing but don't have any. How could I make some?

Smoke up, I use a basic red wine vinegar, olive oil, and 1/2 a teaspoon of dijon mustard and whisk together, don't forget a touch of S & P.

Here's my Thousand Island Dressing recipe that I've used for years.
THOUSAND ISLAND DRESSING
1. Pour 1 inch of pickle juice into a glass (sweet or sour - your choice)
2. Add a squirt of catsup
3. Add a squirt of mustard
4. Add black pepper to taste
5. Add a large tablespoonful of mayonnaise
6. Mix well. It's OK to see small white flecks of mayonnaise. The more mayonnaise you use, the thicker it is so if you want it to pour thin, use less mayonnaise.
For your chicken salad, you could add a little salsa to it as well to add a kick or even add a little chili powder. My dressing is absolutely wonderful on a nice Crab or Shrimp Louie.
Hope that helps.

mayo?? mix half cup with any wine, vinegar, lemon or lime juice or pineapple juice. Add a tablespoon honey. You can double or triple this if you need more.
1/2 cup olive or veggie oil, half cup any of the above liquids or other fruit juice, 2 tablespoons honey, mint leaves, rosemary leaf - slightly crushed, dash cloves to taste. You can add any other herbs you like to this instead of the mint and rosemary or add to them. About 1/4 to 1/2 teaspoon1 Allow this to sit and mellow for about 2 to 4 hours, longer is better, but I suspect you want it for dinner.
Seal left overs in jar in fridge to mellow longer.
