If time is infinite, has no beginning & no ending, does that mean time does not exist?
The reason we know we exist is because we were born at a certain point, therefore we exist. But since time has no beginning and no ending, does it mean it does not exist? Is time something humans made up to keep track of things?

Time is relative.
It's beginning and end can be selected arbitrarily just like with spatial locality.
Time describes the relative motion of given frames of reference.
well there are different types of time. Geologic time, as you mentioned our way of time etc. well firstly in our point of view time has a beginning and end but as you stated overall it doesn't. you exist I exist etc. time was not made but even since the early humanoids and before every life form has been able to keep a sense of time weather it be based on the solar or lunar events in the sky or just the amount of light
The way we perceive time is a lot different from what time actually is. We see time as a reference for the past, present, and future. In reality, time is not a tangable object, and exists outside the human mind. In theory, time and space make up the universe.
