Since monkfruit is so high in its sweetness and is often cultivated for its fructose, it should be okay to use for rock candy. 
Don't know how home made rock candy is made these days, but when I was a kid, we'd tie one end of a string to a pencil and the other end to a plastic weight and put it into a glass with a high percentage of sugar water, and by the next morning there would be rock candy.
