basically, watch out for the 'best before' label.
if the sauce was processed well, it'll be microbiologically safe(free from disease and spoilage causing microbes)..BUT the palatability( color, taste,etc) will be altered after the 'best before' date.
when you're planning to store the sauce in the fridge, remove it from the can and put it in a clean and sealed container. it would probably be ok to store it for at least a week.
