I've just about got my math degree, and I'm trying to figure that out! I'll let you know in a couple of months!

My understanding is that math education gives good prep for a wide variety of careers--not just finance, but you could do computational/statistical work for physicists or biologists (bioinformatics is supposed to be a white-hot field nowadays). You'd also have a leg up if you wanted to become some kind of scientist or engineer. If you tend toward algorithmic thinking, you could become a computer scientist or a straight-up programmer--if you're good at geometry and linear algebra, you might be able to do graphics programming, e.g. for games or movies. You could get into cryptography and cryptanalysis, or more generally you could study techniques in data compression or transmission. You could go on to specialize in operations research, a discipline upon which present-day industry relies quite heavily. It really goes on and on, but I think the real trick is choosing. I've also heard from a couple of people that law schools will consider prospects with math backgrounds, because of the kind of thinking that goes into writing proofs, if you're good at those.
