Trilogy Restuarant on 13th Street in Boulder has a front bar with an extensive wine list. In Denver, try Sketch Food and Wine - its in Cherry Creek on Steele Street. Its relatively new - but has a nice menu and boasts a "500 bottle" wine cellar.
