What's your favorite "it's too hot to cook" summer recipe?

Vegetarian bonus but meat's okay.

Update:

In the interest of reciprocity, here's some of mine-

Smoothies!

1/2 cup frozen fruit, any kind

Enough soy or rice milk to make the mess 16 ounces

A tablespoon of flaxseed meal for health reasons, you could also add vitamin, protein or fiber powders if you like.

Blend until smooth. My family likes these as-is, but guests generally add honey or sugar to taste.

Tuna Salad Sandwiches

Bunch Parsley, chopped

2 green onions, chopped

1 can tuna, drained and juice fed to the cat

Enough mayo to stick it together

Whole wheat bread

Sliced pickles

I think you know what to do.

We also like to eat fruit, tomatoes and feta cheese and bread dipped in olive oil when it's just too hot to bother. We call this our Roman Feast. Maybe not historically accurate, but still tasty and satisfying.

    Mater sandwiches: Two slices of bread/ whole wheat or

    plain.

    Enough mayo to wet the bread.

    thin or med.sliced tomato slices to cover

    bread.

    Sprinkle on a little sugar and pepper.

    top with second slice.

    YOU can grill this as well. And add a

    slice of cheddar or American cheese.

    Either is delicious!!!!

    Lettuce sandwich: Same as mater sandwich except you take a

    few lettuce leave and wash them under

    cold running tap water and drain or shake

    off extra water.

    Place lettuce leaves on first slice of

    bread.

    Add a bit of salt and plenty of black

    pepper.

    Add more lettuce leaves and top with

    second slice of bread.

    liverpudding sand:Two lightly mayo'd slices of bread your

    choice of type.

    Slice liver pudding in thin or med.slices.

    Top with second slice.

    Can add slice of sharpe cheese or American

    This can be grilled as well..mmm delicious

    Salmon salad: 1.can of pink salmon, cleaned of the black

    and silver looking skin parts of the

    fish. On opening can drain a small

    amount 1-2 tablespoons of the fish oil

    into a med. mixing bowl.

    Add cleaned fish, I leave in the crunchy

    bones.

    Add mayo, enough to hold fish together.

    (OPT) Add pickle relish to color fish.

    Make sandwich out of the salad or serve

    on lettuce, or crackers of your choice.

    Ritz Crackers with: thin slice cheddar, piemento cheese,

    cheese whizz etc. let you mind come up

    with other toppings like: liverpudding.

    or creamcheese: plain, or flavored.

    Ice cream: Make milk shakes and add strawberries,

    or bananas or toss in a little of both

    an enjoy.

    Ice cream floats: Add beverages like 7-up or rootbeer to a

    scoop or two of your favorite ice cream

    to your favorite cola or other soda pop.

    Other Coolers: Watermelon, honey dew melon, cantalope,

    kiwi fruit and strawberries. Cut up

    chilling in fridge. Watermelon slices

    are great with a little salt on them,

    some put sugar on them and other fruits.

    Now invent combos of these to suit your tastes and stay cool!

    Linguine! You can make alot and it keeps really well. My mom's recipe is the best I have yet to taste. She uses cooked spring pasta or linguine broke in half. She adds grape tomatoes, cucumbers peeled and sliced in quarters and olives. To all this she adds italian dressing to coat and then the special ingredient. Salad Supreme...it's in the spice aisle and adds all sorts of depths of flavor. Note: You might have to add more italian dressing the next day because of the pasta soaking up liquid.

    If it's too hot out to cook then I'm usually not hungry anyway. A salad would be ok, I like spring mix and mandarin oranges are good in salad also.

    1/4 cup mayonnaise

    1/4 cup vanilla yogurt

    1/4 cup sour cream

    1/4 cup milk

    2 Tbsp. curry powder

    1/2 cup mango chutney

    2 cups red grapes

    1 cup chopped celery hearts

    3 cups fully cooked medium shrimp, thawed if frozen

    PREPARATION:

    In large bowl combine mayonnaise, yogurt, low-fat mayonnaise and milk; stir well. Add curry powder and chutney. Gently stir in grapes, celery and shrimp. Chill well before serving to blend flavors. Garnish with toasted coconut, cashews, and chopped mango

    We like BLT's. You can always cook the bacon in the microwave. But, usually, when it's hot, we don't eat much. Like today, it is 92 degrees, here in Ohio.

    Two words: Liquid meal...

    ...the best kind is ready-to-serve and cold...make mine anything with chocolate, meal and desert together, mmm, good!

    TUNA SALAD, CRAB SALAD, STUFFED ARTICHOKES WITH TUNA OR CRAB MEAT WITH SALAD DRESSING ON TOP.
