In time sandwiches is just sandwiches. Doesn't matter what you make them with.
Use a crock pot and make stews, chili, Chicken and Dumplings. These kind of dishes are like a complete meal in one dish. A few minutes on the web and you will find a ton of Hearty crock pot meals to prepare. Put them on before bed and they're done when you and he wake up. And, you get to sleep with that wonderful in the house.
Add a variety of fruit to his lunches. Something different each day of the week. Apples have many varieties with different flavors and textures. Try fruits you've never tried before. You will be suprised how great some of that weird looking and sounding fruits can be.
The leftovers from the meals you make him for lunch can be frozen and reheated the next week. When you put the leftovers in the container spray with a light coat of Pam first. This will allow the frozen food to come right out. Put the frozen block in the crock pot before bed and it's done in the morn.

italian or vinaigrette salad ressing
in a shallow bowl, beat the eggs. place bread crumbs in another bowl. dip teh eggplant slices into teh egg, then coat with crumbs. place on a greased bakign sheet. bake at 350 degrees for 30 minutes or until crispy. cool. on teh bottom of each bun, layer lettuce, eggplant, red peppers, cheese tomatoes, adn olives. sprinkle with salad dressing and replace tops. et voila!!

Make a wrap, get a tortilla, put lettuce on it, lunch meat, and cheese or vegetables and wrap it like a burrito. Or quesadillas...send him with a tortilla and cheese, and have him warm it up in a microwave. Or a baked potatoes with things to put on top of it...or have broccoli and cheese over it.

Does he have access to a microwave? My wife always makes extra dinner and we box it up for our leftovers...always different, always yummy. I don't think I've ever had a sandwich for lunch.

you could make quiches, they are good cold too. Or on the sandwiches put bruschetta mix with meat and salad.
