Is this beef really ground sirloin?

I just went to the store to pick up some groud sirloin, and the guy told me they changed the name to 90% lean, 10% fat....but the package says ground beef...? Usually the package will say sirloin....

    Who was the "guy"? There is a USDA formula that states the ratio of fat to lean. Selling or labeling things incorrectly have been going on as long as there has been a USDA. What GRADE of meat was this? A lot of things to LOOK at. Ground Round, Ground Chuck, Ground Sirloin and your plain Ground Beef. If they are going to use the 90/10 type label they should be using it on all of their packages. Beef grading for QUALITY is VOLUNTARY so I guess they can tell you just about anything and get away with it. Check out the link-

    They have standardized what can be called ground chuck, ground sirloin, etc., only to be based on the percent of fat content.

    If the meat is on the RED side it is sirlion.

    If it is more pink than red it is probably chuck or round.
