Why do the chips with ridges (ruffles, wavy lays, etc) taste better than the regular potato chips?

Flat vs Ridges. No sauce. Original flavoring only.

Because they have more texture, and therefore hold more grease. Grease = flavor! :)

    Wavy Chips

The wavy shape, or "ruffle" gives the chip more actual surface area then your eye sees. This extra surface can hold more flavoring on the chip, hence the better, stronger flavor. I hope this helps.

I don't care for ridged chips, but they probably have MORE flavor because the ridges give them more surface area to soak up the oil they're fried in.

    Source(s): My own conjecture, purely.

    They're thicker.

Same reason you don't just have one big, fat, taste bud - surface area, dude.

They tend to be crunchier. I think that's why you like them better.

    They're saltier!
