Any ideas for supper for one person?

Hubby's away on business, and I have no idea on what to eat. No particular craving either....any suggestions? Dining out not an option....

    YESSSS. Okay I make this absolutely fabulous tortilla/chicken soup...a recipe that i got off foodnetwork.com.

    Basically you need:

    One large soup pot

    A half a pound of chicken (chopped into cubes)

    A large zucchini

    A large red bell pepper

    Two ears of corn (or like one can will do)

    A medium onion

    Chili paste (chili in adobo peppers is the actual thing but just something hot like chili paste will suffice)

    A medium/large can of diced tomatoes

    Things for garnish:

    Tortilla Chips

    Cheddar Cheese

    Sour Cream

    Really simple. Chop the onion and cook it with the chicken for like ten minutes with a little oil/butter.

    While that's on the stove peel and chop the zucchini into little cubes.

    Also, take the red pepper and put it directly on the grill...basically you want to char the pepper. It's not necessary to do that step but it does make a difference in the taste. If you're not that anal or don't have time, just chop into chunks...taking out the seeds obviously.

    So you've got the chicken and onions in the pan (add a little seasoning to the chicken...cumin, paprika or plain old chicken seasoning are good, along with some S&P) and you've got your zucchini and bell pepper chopped.

    Put the zucchini in the pot so that it'll soften up.

    Now, take your ears of corn and grill them just like the bell pepper....again, not necessary if you just wanna put in a can of corn (drained first) it doesn't really make a difference.

    So once the chicken is cooked enough, not too brown, and the zucchini is a bit tender put the can of stewed/diced tomatoes in, as well as four/five cups of chicken stock (four to five cups is enough, basically you want a nice soup consistency at the end, but remember some of the stock will cook out so add more later if you think the soup isn't...soupy enough) and also add a good tablespoon of the chili paste (obviously depending on your taste for spicy foods).

    Let that simmer for a good 10-15 minutes, stirring occasionally. Towards the end, add your bell pepper (add it sooner if you decided not to grill it, just to soften it up) and your corn. Let that simmer again for about 10 minutes.

    Then when you're ready to serve place soup in bowl. Add a big ole dollop of sour cream, some grated cheese, and some crushed tortilla chips. Enjoy!

    No-crust Curry Chicken Pot Pie--two meals in one

    (From Betty Crocker's "New Choices for Two" cookbook, 1995):

    2 cups cooked chicken breasts

    2 cups frozen mixed vegetables

    1/2 teaspoon curry powder

    1 can low-sodium or low-fat cream of chicken soup

    Biscuit topping:

    2/3 cup biscuit and pancake baking mix

    1/3 cup low-fat milk

    Heat oven to 425 degrees F. Spray two 2-cup round casserole dishes with nonstick cooking spray. Chop cooked chicken breasts. Mix chicken, vegetables, curry powder and undiluted soup. Place half of the chicken mixture in each casserole dish. Mix baking mix and milk; pour half over each chicken mixture. Bake 20-25 minutes or until crust is golden brown.

    Cal. 540, Fat 13 g, Chol. 75 mg, Fiber 9 g, Pro. 38 g.

    Variations: Use 4-6 ounces of cooked beef or pork. Try mushroom or celery soup instead.

    I like making a frittata (omelet). Either a potato omelet or a chorizo omelet.

    For the potato - slice potatos and onions into pan & cook with butter, then when ready, add the egg mixture (egg, milk, parsley, etc), turn down heat and cover. Can serve hot or cold.

    I normally cook Salmon with a garlic and butter sauce and serve it with cooked noodles.

    Mini pizza. You can take pita bread, a bagel, English muffin or burrito. Put about 1 T of sauce (pesto, tomato etc.) over it and Cheese and bake at about 300 until cheese is melted. Of course you can add other toppings you ma have on hand,

    have somethign yummy. just because he is away doesnt mean u cant eat sometime nice. my favourite dish is chicken breast , filled with chicken and wrapped in bacon. simple to make too. slice a chicken breast half way down - put some cubes of cheese in and wrap the bacon around the chicken breast. pop in oven at 180c ( or equivelent) for about 20 - 25 mins. but check its cooked first. and enjoy that with some new potatoes or a jacket potato or maybe savory rice.

    Grilled Mozzarella & Roasted Red Pepper Sandwich

    Makes 1 sandwich

    Ingredients

    1 tablespoon reduced-fat olive oil vinaigrette or prepared reduced-fat Italian salad dressing

    2 slices (1 ounce each) Italian-style sandwich bread

    Fresh basil leaves (optional)

    1/3 cup roasted red peppers, rinsed, drained and patted dry

    2 slices (1 ounce each) part-skim mozzarella or reduced-fat Swiss cheese

    Nonstick olive oil cooking spray

    1. Brush dressing on 1 side of 1 bread slice; top with basil, if desired, peppers, cheese and remaining bread slice. Lightly spray both sides of sandwich with cooking spray.

    2. Place large nonstick skillet over medium heat until hot. Add sandwich; cook 4 to 5 minutes per side or until cheese melts and sandwich is golden brown.

    CHICKEN MARSALA - In a frying pan, butter (melted) sliced mushrooms (Lots). cook until mushrooms start to soften. In a second frying pan cook Chicken (boneless, cut into pieces or strips and coated with flour) in butter, until edges on all sides start to brown. In first frying pan, add finely diced garlic and a generous amout of Marsala wine to mushrooms and heat vigorously for about two minutes, add chicken from second frying pan and cook until sauce thickens (flour from chicken will thicken sauce). To finish, add a spritz more Marsala wine (important, to sharpen Marsala flavor) and serve. - ENJOY

    Maybe a baked potato with broccoli and melted cheese on top with sour cream on the side? Or maybe a spoonful of chili on top of the baked potato instead of the broccoli?
