Got any good tasting, easy to do, low carb recipes?

ok, I know there are a lot of different recipes on the web, in books, on video, on tv etc, but I just wanted your low carb recipes LOL

Update:

BTW, low carbing can mean just cutting out sugar and breads.. I feel much better with out sugar and breads.. don't you think that is healthy? Doesn't mean you have to cut out salads etc..

    then i would say, cut out the sugar and breads. Any meal that envolves sugar, use splenda, any meal that envovles bread, cut it out and used an alternative like, actually just dont have the meal cause the meal was designed the way it is and changing it too much might make it taste horrible. I like food, and when i cook, I make it delicous and dont even worry about the carbs, I just cut down my intake. I love salads, i just made a really good one the other day, the way I made it wasnt low carb but just take out the carbs and it will probably still taste great. It was a Romano lettuce with some caesar, avocado, bacon bits, dried tomatoes, crutons, some parmason cheese...mmm. Cut down on the intake, not the taste.-------------------------------------------------------------------Ha ha, hope you find a good one....you know, an angel came to me and gave me these holy recipies...here, try them.

    Egg Salad Rollup Recipe

    Ingredients:

    3 hard boiled eggs

    1 stalk celery

    10 olives

    1/8 cup onion powder

    dash black pepper

    dash salt

    2 Tbsp mustard

    1/4 cup mayo

    1 low carb tortilla

    Chop up the eggs, celery and olives into small pieces. Blend all ingredients together using more or less mayo to your own preference. Lay the ingredients in a stripe just above the center of the tortilla.

    Philly Cheese Steaks

    2 lbs. good sirloin chopped up

    1 8-oz package cream cheese

    8-oz provelone cheese

    1 red pepper

    1 portabella mushroom

    1 onion

    2 cloves of garlic

    Olive oil

    Lots of seasonings

    Heat up skillet. Pour olive oil into pan. Saute red pepper, portabella, onion, and garlic Add salt, pepper, and any other seasonings that you like (I like garlic salt and onion powder)

    Add sirloin and cook to your preferred temperature. Cut up cream cheese and provel into chunks. Add the cheeses and stir until you have made a sauce. Serve in bowls.

    4 generous servings at 8g carbs each.

    Low carb can be very healthy, a lot of people don't understand it at all, and a lot don't do it correctly, they think meat and cheese is all you eat.

    If you eat lots of fresh veggies, some whole grains, chicken and fish, what could be healthier than that? Here is one of my favorite recipes.

    Chicken and Eggplant Parmesan

    Prep. time: 10 minutes Cooking time: 32 minutes

    Serves: 4

    1 small eggplant, about 1 pound, cut into 1/4-inch rounds

    4 tablespoons olive oil

    1 teaspoon salt

    fresh ground black pepper

    1 pound boneless skinless chicken breasts, (about 3)

    2 cups canned crushed tomatoes in thick puree ( I addedseveral large cloves of garlic to the sauce)

    1/2 pound mozzarella cheese, cut into thin slices

    1/3 cup Grated Parmesan cheese

    1/4 cup fresh basil leaves, lightly packed ( I substituted about 1/2 jar of pesto and it worked well)

    Directions

    Heat the broiler. Arrange the eggplant in a single layer on a large baking sheet. Coat both sides of the eggplant with 2 1/2 tablespoons of the oil and sprinkle with 1/2 teaspoon of the salt and 1/4 teaspoon pepper. ( iused an olive oil spray to speed thing up a bit) Broil, turning once, until browned, about 5 minutes per side. Turn off the broiler and heat the oven to 425 degrees.

    In a large nonstick frying pan, heat 1 tablespoon of the oil over moderately high heat. Season the chicken with 1/4 teaspoon of the salt and 1/8 teaspoon pepper and add to the pan. Partially cook the chicken for 2 minutes per side and remove from the pan. When cool enough to handle, cut the chicken crosswise into 1/4 inch slices.

    Oil an 8-inch square baking dish. Put one third of the eggplant in a single layer in the dish. Top with half of the chicken, half of the tomatoes, half of the mozzarella, one third of the Parmesan, half of the basil, and the remaining 1/4 teaspoon of salt. Repeat with another third of the eggplant, the remaining chicken, tomatoes, and mozzarella, another third of the Parmesan, and the remaining basil. Top with the remaining eggplant and sprinkle with the remaining cheese. Drizzle with the remaining 1/2 tablespoon oil. Bake for 20 minutes and let sit for 5 minutes before cutting.

    Another one of my quick favorite things was lettuce wraps; use large lettuce leaves, spread with mayo, mustard or a dressing of your choice then layer with thin sliced meats such as turkey breastor roast beef and /or cheese, add some thin sliced veggies such as tomato, onion, cucumber, sprouts, etc, rollup and enjoy!

    I also like the quick stir fry:

    Heat a skillet witht alittle olive oil and add:

    Bagged coleslaw mix (shredded cabbage, somtimes with carrots & red cabbage)

    and /or fresh sliced zucchini & yellow squash

    throw in whatever fresh sliced vegetables you have; green pepper, onion, etc

    frozen peas are a good complement to some mixtures

    Stir fry till the vegetables are slightly wilted then finish whatever way you like;

    A cream sauce-add a few tablespoons cream, maybe some cooked crumbled bacon or a sprinkle of cheese

    A tomato sauce-fresh or canned chopped tomato or tomato sauce, some garlic or italian herbs, spice it up with red pepper, a dash of lemon juice

    Italian- add fresh garlic, red pepper, a sprinkle of fresh grated parmesan or romano and a few pepperoni slices

    3Medium Zucchini

    ½Cup Onion – chopped fine

    ½ Cup Bacon Bits (Real Bacon)

    1Tsp Garlic Salt

    3Cups Shredded cheese – divided (I use Mexican Blend)

    Preheat oven to 375 degrees.

    Quarter squash lengthwise then slice into 1/4” thick “moons”

    In mixing bowl by hand stir up squash, bacon, onion seasoning and 2 cups cheese. Spray 9” X 3” round baking dish with Pam. Put mix in baking dish and top with remaining cup of cheese.

    Bake uncovered at 375 degrees for 30 to 35 minutes.

    Chicken fajitas

    I use wheat tortillas, saute chicken breast (add favorite flavoring) using small pieces...

    Fill the tortilla with lettuce, cheese, tomato, onion and light sour cream if you wish.

    Salads are good, add turkey or ham.

    Hamburgers on the grill, NO BUN. Wrap the hamburger in a big lettuce leaf, fill with condiments!

    I don't know how much carb the chicken wing recipe has but I like it most because it is my own recipe!

    <<<<< Baked Ricotta Mushrooms >>>>>>

    10 large mushroom (stems removed)

    1 tablespoon grated Parmesan cheese

    1 tablespoon dried breadcrumbs (whole wheat bread or oat bread)

    Ricotta and herbs filling

    1/2 cup reduced-fat ricotta cheese

    3 sun-dried tomatoes, soaked in warm water until soft, chopped

    1 tablespoon finely diced red onion

    1 tablespoon chopped fresh basil

    1 tablespoon snipped fresh chives

    1 teaspoon lemon juice

    freshly ground black pepper

    1) Preheat oven to 180 degree C / 360 degree F/ Gas 4. Line a baking tray with nonstick baking paper. Set aside.

    2) To make filling, place ricotta cheese, tomatoes, onion, basil, chives, lemon juice and black pepper to taste in a bowl. Mix to combine.

    3) Spoon filling into mushrooms. Place on prepared baking tray. Combine Parmesan cheese and breadcrumbs. Sprinkle over mushrooms. Bake for 10-15 minutes or until filling is set and top golden.

    Content per mushroom : 32 Cal. / Carb. 3g / Total fat. 1g, Sat. fat: 0.6 g / Sodium 48 mg / Fiber 0.3 g

    Note: low-sodium mozzarella can be used in place of the Parmesan Cheese in order to lower the calories and the sodium content.

    <<<<<<< Oak leaf, Pear and Walnut Salad >>>>>> (Serves 4)

    2 ripe firm pears, cored

    lemon juice

    1 red oak leaf lettuce or other red lettuce (coral or mignonette), leaves separated

    1/3 cup unsalted walnut halves

    2 tablespoons crumbled low-fat ricotta cheese

    Red Wine Pear Dressing

    1 canned or blanched fresh pear, with 1 tablespoon liquid reserved

    2 tablespoons red wine or balsamic vinegar

    1 teaspoon freshly ground black pepper

    1) To make dressing, place pear and liquid vinegar and black pepper in a blender. Puree.

    2) Cut each pear into eight segments. Place in a bowl and add lemon juice. Toss to coat (this helps prevent the pears from browning).

    3) Arrange lettuce on a serving platter. Top with pears. Drizzle with dressing. Scatter with walnuts and cheese.

    Content per serving: Cal. 134 / Carb. 20g / Total fat: 6 g / Sat. fat. 0.8 g / Sodium: 14 mg / Fiber: 2.6 g

    <<<<<Grilled Chicken Wings >>>>>>>>

    800 g Chicken wings

    2 cloves of garlic (crushed)

    2 slices of fresh ginger (crushed)

    2 tablespoon of honey mix with water

    Marinade:

    5 tablespoon of soy sauce

    2 tablespoon of cooking wine

    3 teaspoon of sugar

    2 teaspoon of cornstarch

    Mix the chicken wings, garlic, ginger with the marinade, marinate in the refrigerator overnight or at least 2 hours

    Pre-heat the oven 180 degree C, bake the chicken wings for about 20 mins or until golden on all sides (turn occasionally). Reduce heat to 100 degree C, brush honey water over the chicken wings and bake for 5 mins. Serve immediately

    heres a quick LC dessert, ricotta cheese, splenda, vanilla, cinnamon, its like eating rice pudding, low carb is very healthy eating, dont listen to what vette person said......... Atkins is not only advocate of LC.

    Not to sound harsh, but low carbohydrate dieting is a fad diet that can actually be extremely bad for your health. Dr. Atkins weighed 248 pounds when he died with severe hardening of the arteries. Your total calorie intake is what to watch.
