What kinds of dogs fetch?
I assume any kind of dog called a retriever will fetch, but will any sort of sheepdog, collie, or German shepherd fetch?

Almost any dog can learn to play fetch, and my German shepherds have been very "fetching," if you'll pardon the pun. If you get an older dog that hasn't learned to play, you may have to work a little harder at it and put more enthusiasm into your voice. But even they can usually learn to enjoy the game.
The champion fetcher of all my dogs was my old Husky/shepherd cross. . .he never met a branch he didn't like.
We lost a 9 foot crown limb from a sycamore tree during an ice storm. The branch was as thick as the average sized man's leg and weighed so much that my husband and I could barely move it together.
My husband teased Max and told him to fetch the 'big stick." And that goofy dog actually managed to move it almost a foot away from the original spot before he let go.
Now THAT was fetch taken to a new level.

I believe just about any dog can be trained to play fetch. I have 2 Shih-tzus that love to fetch. My neighbor had a doxie that lived to play fetch (you had to hide her ball eventually cuz she just wouldn't rest for a second as long as it was around). I've also met Collies and German Shepherds at the dog park that fetched and I suppose sheep dogs would too (haven't been around too many of them though to know for sure).

Any dog will fetch if trained correctly, but my friend has a German Shepard who absolutely loves to play fetch. My cousin also has a black lab mix who could play fetch all day and will even "throw" the ball in the air for himself!

The absolute BEST dogs ever in my experience. (I've had over a dozen in my life) are retrievers. Any retriever, golden, yellow lab, chocolate lab, or black lab. They are excellent family dogs, very loyal, very obedient, quickly trained, and even as they age will always ALWAYS favor a tennis ball fetch game over a lazy day in the house. My dog Abby is a 12 year old golden retriever who's seriously lacking the energy to do much these days. But she still tries to get up and bring you something to play with her with. These dogs are amazing pets, and can make an amazing addition to any family.

Any breed can learn to fetch, if properly taught. My pit bull loves to play fetch. But.....only for about 10 times...he then tires of the game, and rips apart what ever he was fetching...smiling.

In my experience, most dog breeds will fetch or can learn to fetch. However, retrievers can be downright MANIC about it - my sister's golden retriever will chase balls to the point of exhaustion; they have to hide the ball to get her to go inside.

I'm pretty sure you can teach any dog how to fetch, but the more active the breed the easier they'll enjoy it. I have a corgi/jack russell mix who enjoys fetch, but my beagle/jack russell absolutely LOVES it - she can run and play 24/7.

My St. Bernard-Border Collie mix fetches - - you just better be sure he's got room to run.
I think most dogs can learn to fetch.
