Make a veggie coconut curry soup...quick and easy! Just sautee some garlic & ginger in a bit of oil. Add curry powder, and some of the following:
Carrots, bok choy, sliced waterchestnuts, canned baby corn, canned diced tomatoes, mushrooms, bean sprouts, broccoli. Add a can of coconut milk & a can of veg broth and simmer for a bit. Garnish with green onions.

if you're a vegan, have vegan food. Eat broccoli. I personally like to eat meat, and avoid vetetables, so I wouldn't know. Maybe a search for vegan recipes on yahoo or google.
Try a stuff pepper. I was supposed to eat one once, but I don't remeber if I did or not

Tomato soup and a grilled cheese sandwich! Have some Fritos corn chips on the side. YUMMY!
