I like streamed string beans and twice baked potatoes.
I cut my freshly baked potatoes in half and (using a spoon) scoop out the potato. Add some butter, sour cream, chopped shallot, salt & pepper and some shredded mexican cheese. Put the empty shells in the oven 350 to stiffen them... Take shells from oven and fill with potato mixture, add some more cheese on top and bake at 350 for 1/2 hour. Simple and delicious!

How about a nice mixed green salad with blue cheese and walnuts, and potato leek cassarole. Both are easy will be wowed. for the casserole just peel as many potatoes as you need (I recommend yukon gold or red potatoes) and slice into 1/4 inch rounds, place in a well buttered dish and add leeks (or onions), salt and pepper. Dot the top with pats of butter and pour over heavy cream to cover potatoes. Bake in a 350 oven for an hour. Garnish with chives. WOW!

could never be a vegetarian because of my weakness for this recipe. It's perfect for special occasions; it's very easy, and I can cook the steaks to each person's preference (rare for me, please!). French bread is a must so you'll be able to sop up every bit of the delicious juices.'
