Spam and Cheese Casserole

INGREDIENTS

1 (12 ounce) container fully cooked luncheon meat (e.g. Spam), chopped

2 eggs, beaten

20 soda crackers, crushed

2 cups milk

1 cup shredded Cheddar cheese, divided

DIRECTIONS

Preheat oven to 350 degrees F (175 degrees C).

In a 9x13 inch baking dish combine the meat, eggs, cracker crumbs, milk and 3/4 cup of the cheese. Mix well. Sprinkle remaining 1/4 cup cheese on top.

Bake uncovered in the preheated oven for 1 hour. Let cool and serve.

We like this....I usually double the recipe.

CUSTARDY MACARONI:

8 oz. elbow macaroni

1 medium onion (chopped)

1 can Spam (cubed)

1 tablespoon butter

2 tablespoons parsley flakes

1/2 cup grated parmigiana cheese

1/8 teaspoon paprika

1/8 teaspoon pepper

3 eggs (beaten slightly)

3 cups milk

1 cup shredded sharp cheese (divided 3/4 & 1/4) Cook macaroni, drain and set aside. Saute onion and Spam in butter for 5 minutes, drain off grease. Mix macaroni with parsley flakes, parmigiana cheese, paprika and pepper to coat. Stir in spam mixture, 3/4 cup sharp cheese. Pour into greased 2-quart baking dish. Beat eggs slightly and combine with milk; pour over macaroni. Top with remaining 1/4 cup sharp cheese. Bake at 375 for 40-45 minutes or until set. Remove from the oven, and let stand for 5 minutes before serving.

We love this Potato Salad. Quantities are general - use as much as you like of each!

Make a salad dressing of about equal quantities of mayonnaise and either creme fraiche or soured cream. Season.

Chop some onion finely and some crisp, slightly tart apple with the skin on, and stir into the dressing.

Slice the spam and fry briefly until browned. Cut into strips or cubes, however you like. Stir into the dressing mix.

Slice or cube your cooked potatoes and stir those into the dressing mix, too.

Gently mix it all together; you can finely chop a hardboiled egg and sprinkle on top, also.

Serve and enjoy!

(You need quite a bit of dressing to keep it all moist.)

I once dated a guy who's mother made the most outrageous SPAM dish! I recall that the SPAM was cubed, tossed with bowtie pasta, peas, and a creamy type dressing. You may want to try hormel.com. Betcha they have a ton of great ideas for the canned beast!

go to Hormel's or Spam's website and they should have plenty of recipes there. If not, try www.recipezaar.com or www.allrecipes.com and you may be in luck there. I like Spam too, the low-sodium one.

I like it just like a western omlette but instead of ham use the spam. Very good.
