Mini-Quiches
Ingredients
8 oz Cottage cheese-small curd
1/4 c Sour cream
4 oz Shredded sharp cheddar cheese
1/2 c Bisquick (I used RecipEase)
1/4 c Melted butter
3 Eggs
Preheat oven to 350 degrees. Mix all ingredients with
Electric mixer. Grease mini-muffin tins or use Teflon ones.
Fill 3/4 full. Bake for 15-20 minutes or until brown.
Hints: Add onion, bacon, mushrooms,etc. May be frozen.
Reheat at 300 degrees or microwave for 3 minutes on high.
Note: These are great! Be sure to add cooked bacon and

This is easy and I almost always have the ingredients on hand.
Hot Bean Dip
1 8 oz. pkg. cream cheese
1 14 oz. can refried beans
1 cup shredded cheddar cheese
1 bag tortilla chips
Spread cream cheese on bottom of 8 x 8 pan. Spread refried beans on top of cheese. Sprinkle with cheese. Bake at 350 until warm and bubbly. Serve with chips.
This sounds really plain but the beans and cream cheese become beautifully creamy and really balance eachother out. If you like a little more heat you can add a cup of salsa before the cheese layer but it's really unnecessary. When I make this people always think that there must be something else mixed in to make it taste so good but there isn't!

L'il Smokies in Barbecue Sauce
1 lb. L'il Smokies or smoked sausage cut in chunks
1 (10 oz.) jar grape jelly
1 (12 oz.) bottle chili sauce
1/2 tsp. Worcestershire sauce
Stir jelly, chilli sauce, and Worchestershire together in a slow cooker. Cook on Low until the jelly melts.
Add L'il Smokies or sausage chunks, cook until heated through.

Taco Dip
1 pound ground beef
re fried beans
sour cream
lettuce
cheese
Cook the beef and the beans, add taco seasoning to the beef. Then layer it all as shown. It's fast and easy. Serve with tortes chips.

This is almost tooooo easy...
Cook up those tiny sausages, after they are cooked put barbeque sauce on top of them and keep them in a small crock pot with tooth picks beside it...how much easier can it get and it is GREAT.

Cheese-Filled Mushrooms
1 1/2 pounds white mushrooms
1 cup shredded Cheddar cheese
1 cup shredded mozzarella cheese
1 cup shredded Parmesan cheese
3/4 cup mayonnaise
Crumbled cooked bacon, to taste (optional)
Preheat oven to 375 degrees F. Lightly grease a large cookie sheet; set aside. (If desired, line cookie sheet with aluminum foil to save on cleanup.) Wash mushrooms thoroughly; dry and remove stems, hollowing out a hole where the stem was attached to the mushroom. Set aside. Mix together cheeses, mayonnaise and bacon (if using). Pack the center of each mushroom with a mound of the cheese mixture. Arrange mushrooms on cookie sheet. Bake until cheese is browned and mushrooms are shiny, about 20 minutes. Mushrooms may be stuffed and refrigerated ahead of time, then baked as needed.
Veggie Pizza
1 package crescent rolls
1 cup sour cream
One half cup mayonnaise
1 package dry Hidden Valley Ranch dip mix
1 cup cheddar cheese, shredded
One half cup fresh broccoli, chopped
One half cup green onions, chopped
One half cup carrots, shredded
One half cup zucchini, grated
One half cup mushrooms, sliced
1 8-oz. can sliced water chestnuts, drained and chopped
Spread out crescent rolls on a baking sheet to form a crust and bake for 10-15 minutes at 350 degrees until lightly browned. Remove from oven and allow to cool. Combine sour cream, mayonnaise and dry dip mix and spread over crust. Place vegetables over dressing and top with shredded cheese. Refrigerate until ready to serve. Cut into squares before serving.
Crispy Cheese Poppers
1 package (8 ounces) cream cheese, softened
1 fresh jalapeño pepper, stem and seeds removed, chopped
1/4 cup grated cheddar cheese
18 wonton wrappers (from a 16-ounce package), thawed if frozen
1-1/2 cups vegetable oil
In a medium bowl, combine the cream cheese, chopped jalapeño, and Parmesan cheese; mix well. Place a wonton wrapper on a flat work surface. Dip your fingers in a small bowl of water and moisten the edges of the wrapper. Place about 1 tablespoon of the cheese mixture in the center of the wrapper and fold diagonally to form a triangle. Seal the edges firmly with your fingers. Continue with the remaining cheese mixture and wonton wrappers. In a large deep skillet, heat the vegetable oil until hot but not smoking. Fry the wontons in batches for 30 seconds per side, or until crisp and golden. Remove with a slotted spoon to drain on a paper towel-lined platter. Serve immediately.
SO SIMPLE APPETIZER
1 loaf Italian or French bread, sliced diagonally
Salami
Cheese (Provolone, Mozzarella, American or your favorite) sliced
Tomato
Italian dressing
Top each slice of bread with salami, cheese, tomato and Italian dressing. Broil until bubbly. Serve immediately.

Pickle rollups...take lunchmeat ex. ham, then put spread cream cheese on the ham, then a pickle, roll up the pickle inside the ham, use toothpicks, and cut in sections.
