Anyone have an easy Tazitki recipie?

    Yes,you can have mine

    1 1/2 c Strained yogurt

    2 md Cucumbers

    4 lg Garlic cloves (or more)

    4 tb Olive oil

    A little vinegar

    Salt

    Grate the (peeled) cucumber or chop finely. Salt it, and squeeze out

    and discard the liquid. Add to it the peeled (minced or grated)

    minced garlic, the vinegar, yogurt and stir the mixture. Finally,

    add the oil. If you want, sprinkle with paprika and garnish with

    olives.

    Variation: You can add more garlic, if you want a spicier tzatziki,

    or you may add to the mixture almonds or hazelnuts which have been

    blanched and skinned.

    Tzatziki is traditionally served as an appetizer and can be left on the table as an accompaniment to foods throughout the meal. The key to great tzatziki is the thick creamy texture that allows it to be eaten alone, as a dip, as a spread, and as a condiment.

    INGREDIENTS:

    * 16 ounces (2 cups) of strained Greek yogurt

    * 4 to 10 cloves of garlic, diced

    * 1/2 cup of peeled, diced or shredded cucumber

    * 1 tablespoon of olive oil

    * 2 teaspoons of lemon juice

    PREPARATION:

    Prepare all ingredients in advance. Combine oil and lemon juice in a medium mixing bowl. Fold the yogurt in slowly, making sure it mixes completely with the oil. Add the garlic, according to taste, and the cucumber.

    Stir until evenly distributed. Garnish with a bit of green and serve well chilled.

    Yield: about 2 1/2 cups

    Add mint or dill: Slight variations include 1 tablespoon of either finely chopped fresh dill or fresh mint. Either one makes a tasty addition.

    Tzaziki

    4 cups plain yogurt, whole milk or low-fat

    2 hothouse cucumbers, unpeeled and seeded

    2 tablespoons plus 1 teaspoon kosher salt

    1 cup sour cream

    2 tablespoons champagne vinegar or white wine vinegar

    1/4 cup freshly squeezed lemon juice (2 lemons)

    2 tablespoons good olive oil

    1 tablespoon minced garlic (2 cloves)

    1 tablespoon minced fresh dill

    1/4 teaspoon freshly ground black pepper

    Place the yogurt in a cheesecloth-lined sieve and set it over a bowl. Grate the cucumber and toss it with 2 tablespoons salt; place it in another sieve and set it over another bowl. Place both bowls in the refrigerator for 3 to 4 hours so the yogurt and cucumber can drain.

    Transfer the thickened yogurt to a large bowl. Squeeze as much liquid from the cucumbers as you can and add the cucumbers to the yogurt. Mix in the sour cream, vinegar, lemon juice, olive oil, garlic, dill, 1 teaspoon salt, and pepper. You can serve it immediately, but I prefer to allow the tzatziki to sit in the refrigerator for a few hours for the flavors to blend. (makes 5 cups)

    Tzatziki Recipe

    5 min 5 min prep

    1 cup strained yogurt

    2 medium cucumbers

    4 cloves garlic

    salt

    vinegar

    Skin the cucumbers.

    Using a vegetable grater cut the cucumbers into small strips, and then cut into small pieces.

    Drain the cucumbers well, and then add salt.

    Crush the garlic cloves and add.

    Add the yogurt and a little vinegar.

    Mix the ingredients together.

    Add some olive oil.

    I have made it at work a few times

    this is what i did:

    12 oz plain yogurt

    1 or 2 cucumbers, seeded and minced

    4 or 5 cloves of garlic, minced

    a little bit of olive oil and a little bit of white vinegar

    and a little salt

    mix it all together and there you have it

    The easiest way I ever made it is this: Just add some grated (strained) cucumber and garlic to cottage cheese or yoghurt. Salt and pepper to taste. All the other ingredients are optional and you can add them later if you want to. Good luck!
