Lactobacillus will digest some of the sugars in milk and lower the pH, making it taste "sour" and making it less likely to support other dangerous bacteria. You Got Yogurt! Now you can keep that milk longer and get even more nutrients from it.
Shall we talk cheese? Just different type of bacteria or fungi doing the same sort of thing. You end up with a dairy product which is durable, transportable and really calorie and nutrient- dense.

Actually it does not necessarily get spoiled.
Yogurt is made by mixing bacteria and milk and so is cheese.
some bacteria will spoil the milk and others just make it turn something else that people can still safely eat

it depends what bacteria you put in.....You get friendly Bactria's and Bactria's like salmonella which can give you food poison.
friendly Bactria's are the once change the milk in to yogurt or cheese. They are completely harmless and good for your health.

the bacteria feed on the sugars (lactose) and multiply and will spread throughout it with a day and you get inedible (probably!) cheese or youghurt!
