I have strange symptoms after eating a high carb meal what causes the following symptoms?
For example last night I had a meal of brown rice and steamed vegetables,
about 2 hours later I went to bed but I started to experience heart palpitations, shakiness, racing heart beat, and feeling jittery,I had a hard time falling asleep and felt groggy not energetic when waking up in the morning. It seems I had some kind of reactive hypoglycemic response. What causes these symptoms?
If I would have had chicken and vegetables instead of rice I would not have experienced this episode...........
combining proteins and carbs at the same meal doesnt help me either because i have digestive probs and digest better when protein and carbs are seperated.
I FOLLOW A TOTALLY ORGANIC AND GLUTEN FREE DIET,IVE BEEN TO DOCTORS THEY NEVER SAY ANYTHING...

This DOES sound like a Hypoglycemic episode. Too much glucose in the bloodstream can cause an exaggerated insulin response which causes the LOW blood sugar. Pairing the carbs with proteins is the best way to stop this. You could try taking Digestive Enzymes - these would help with the digestion of the protein. Then maybe the carbs & proteins could be eaten together.
A good trick to stop the jitters at bedtime is to eat a piece of cheese or other protein food once you have already gotten into bed. I have hypoglycemia and I can't ever sleep unless I do this. GOOD LUCK!

Talk to your Doctor about your doctor about your symptoms. Does this happen when you eat other types of grains? You may have a food sensitivity. I doubt you had a hypoglycemic (low blood sugar) response, because carbs are converted into sugar. If possible, talk to a nutritionist/dietitian on how different foods affect blood sugar.

Go have a fasting glucose tolerance test done and visit a dietician. If your body is reacting like this and you are trying to eat all carbs at a single meal, you may find yourself on insulin very quickly

you could have an inability to process gluten or some allergy to any of the countless preservatives in foods these days . ask your doctor to least you for gluten intolerance . it is not normally screened for so you will have to ask . There's an odd gene inheritable condition , name escapes me but my girl friend share a bit ago it took her doctor many years to pinpoint her problem . she is on a special diet and no longer sick .Good luck
