what do americans mean by 'broiling', i am from wales?

    Our ovens have a "broil" setting. It is high heat from the top of the inside of the oven only. We use a "broiling pan". It is a shallow pan that has a sheet across the top with slits to drain the fat from meat. We put steaks chicken, fish steaks, pork chops on the broiling pan and set them under the broiler. After a short time we flip them over for a while. This setting can also be used to brown meringue, melt cheese, etc...

    broiling is a cooking technique where the heat source is above the product

    this should not be confused with grilling where the heat source is below the product and the grill comes into direct contact with the product. in addition, grilling is generally done at a slightly cooler temperature

    Broiling is what you would refer to as "grilling" in the UK.

    In the states, when we grill, that refers to a barbeque, usually out of doors.

    In the UK it is the equivalent of grilling.

    It melts the cheese on your sandwich in the "OVEN" from the top of the oven downwards.
